Servin’s 2008 Chablis Montee de Tonnerre smells delightfully of fennel, lily-of-the-valley, peach, orange rind, and quinine. Dense and citric on the palate yet also generously stone-fruited, it projects a superb sense of energy, finishing with a whirl of citrus, flowers, herbs, and crushed stone and white pepper suggestions of things mineral. Like a number of this vintage’s Servin wines, it rather surprisingly blows past its 2007 predecessor, and I would anticipate up to 5 or six dynamic years of cohabitation with any bottles I purchased.
