This is a blend of pinot noir from Aÿ and Mareuil-sur-Aÿ (66 percent) with chardonnay from Chouilly and Cuis. It starts off dry and austere, with a line of limestone acidity carrying flavors of fresh green pear and the caramelized scent of an aged Gouda. Tangy in its yeastiness, vinous in its earthy savor, it’s a substantial Champagne to pair with delicate Cantonese preparations of crab.

This firm, well-knit Champagne delivers ripe and juicy nectarine and blood orange granita flavors, with accents of honey, chalk and pickled ginger lingering on the fine bead through the finish. Drink now through 2019. 120 cases imported.
