- From a 19th century vineyard site on the slopes of Mount George, east of the city of Napa, Palmaz rises from 400 to 1,400 feet. The higher elevations bring freshness to the blend, which ranges from dill to black pepper in spice, from silk to plush velvet in texture. This needs bottle age or decanting to get past its youthful green edge of reduction. Then serve it with Provençal lamb and roasted tomatoes.
