Crafting wines of remarkable quality and consistency, Bernard and Jean-Marie Raveneau are staying true to their father Francois’s philosophy of producing the best quality Chablis without compromise. Since 1948, Domaine Raveneau has been committed to very low yields and handpicked fruit that is aged in large old oak barrels to enhance the wonderful perfume, creamy texture and age worthiness that make these wines so highly prized.
Summary
The 2015 Chablis 1er Cru Vaillons from Domaine François Raveneau is a remarkable expression of Chardonnay from the esteemed Burgundy region. Sourced from a south/southeast-facing site with Kimmeridgian limestone, this wine is crafted from low-yield grapes, hand-harvested and fermented with native yeasts. The wine undergoes malolactic fermentation and is aged for 12–18 months in used barrels, allowing the fruit to shine without the influence of new oak. Tasting notes reveal a vibrant minerality, crisp acidity, and a bouquet of wet limestone with subtle spice. The palate is fresh and energetic, showcasing a harmonious balance of citrus and orchard fruit, culminating in a persistent and lively finish.
