The 2015 Chablis 1er Cru Vaillons from Domaine François Raveneau is a remarkable expression of Chardonnay from the esteemed Burgundy region. Sourced from a south/southeast-facing site with Kimmeridgian limestone, this wine is crafted from low-yield grapes, hand-harvested and fermented with native yeasts. The wine undergoes malolactic fermentation and is aged for 12–18 months in used barrels, allowing the fruit to shine without the influence of new oak. Tasting notes reveal a vibrant minerality, crisp acidity, and a bouquet of wet limestone with subtle spice. The palate is fresh and energetic, showcasing a harmonious balance of citrus and orchard fruit, culminating in a persistent and lively finish.
