The hand-picked grapes are fermented in vitrified concrete vats, without temperature control, and by performing two pumping-over operations per day to keep the cap of skins moist for a gentler extraction of tannins from the skins.
Montevertine Le Pergole Torte 2004 is a distinguished 100% Sangiovese red wine from the Radda region of Tuscany, renowned for its elegance and complexity. First produced in 1977, this wine helped redefine the standards of Tuscan fine wine after the estate opted for pure Sangiovese outside the Chianti Classico consortium. The 2004 vintage is celebrated for its balance and aging potential, showcasing flavors of sour cherry, rose, and orange peel, complemented by earthy tobacco and graphite notes. Aged for 24 months in both Slavonian and French oak, it presents a silky texture with vibrant acidity, making it suitable for both immediate enjoyment and extended cellaring. The wine features a striking label by artist Alberto Manfredi.
